No-Fry Dahi Vada

Urad Dal No Fry Dahi VADA are soft and spongy, soaked in sweet yoghurt, and taste much like their fried counterparts, but without the guilt!

Ingredients

For the Vada

  • 100 gm Urad Dal
  • 4 gm / 1 small green chilli
  • 2 gm / ½ tsp Mastercook Jeera
  • 4 gm / ½ inch piece, Ginger
  • 5 gm / 1.5 tsp Salt

For the Sweet Yogurt

  • 500 gm / 2 cups Yogurt
  • 50 gm / ¼ cup Sugar
  • 3 gm / 1 tsp Salt

For garnish

  • Sev / fried gram flour noodles
  • Mastercook Jeera, powdered
  • Red chilli powder
  • Chaat masala
  • Imli-Khajoor Chutney (Tamarind & Dates Chutney)

Procedure

For the Vada

  • Wash and soak the urad dal for atleast 7 hours.
  • In a blender, add the soaked urad dal and green chilli, ginger and Mastercook jeera. Blend with a little water.
  • Blend to almost a smooth paste, there should be some very small bits of urad dal.
  • Transfer to a bowl, add salt and about 50 ml of water, the batter should be slightly thick.
  • Heat an appe pan / paniyaram pan and add oil to it. Drop in about 1 tbsp of batter into each cavity and cover, let it cook for about 2-3 minutes, flip and let brown on the other side.
  • Once golden brown on both sides, remove to a plate and set aside.

For the Sweet Yogurt

  • In a mixing bowl, add the yogurt and a little bit of water to loosen it, whisk well with the sugar and salt. Set aside.

To Assemble

  • Take around 750 ml of water in a large pot or bowl. Add 1 tsp of salt, ½ tbsp of Red chilli powder and 1 tsp of chaat masala. Mix well and add the vada’s to this water. Leave for 15 minutes to soak.
  • Once soaked, lightly squeeze out the excess water and add to the sweet yogurt. Stir gently to coat each vada and place in the refrigerator for 1 hour so that the vada’s can absorb the yogurt.
  • Serve in a bowl, garnished with Mastercook Jeera, powdered, Red chilli powder and chaat masala. Drizzle some Imli-Khajoor chutney and enjoy!

Tips for Cooking

  • The Vada’s can be made 1 day prior and stored in the refrigerator.
  • Do not keep the vada’s in the yogurt for too long, serve immediately after it has chilled in the refrigerator for an hour, it will tend to start disintegrating.
  • The sweetness of the yogurt can be adjusted to your liking.
