Nachos
We’re bringing a touch of Mexico to India. To the desi mind, nachos are deep-fried roti pieces. With a base of maize flour and wheat flour, this perfect movie-time companion will have you munching for hours.

Ingredients
- 1 cup maize flour
- 1/3 cup Master Cook Chakki Atta
- 1/4 tsp turmeric powder
- 1 tsp carom seeds
- Salt to taste
- 1/2-3/4 cup water
- 1 tsp oil
- Oil for frying
- Spice Mix: Salt + Black Pepper Powder + Red Chilli Powder + Aamchoor Powder

Procedure
- Mix together flours, turmeric, carom and salt.
- Add water little at a time and knead until it forms a smooth dough.
- Let the dough rest for 20 minutes and then add a tsp of oil and knead again.
- Heat oil in a deep pan or pot.
- Roll out portions of dough and using a round cutter, make circles.
- Cut these circles into 6 equal slices.
- Deep fry these slices until crisp.
- Let drain and then toss in the spice mix.
- Serve with salsa.
