Chicken Stuffed Omelette

  • 1 tbsp oil
  • 1/2 cup onions, sliced
  • 1 tsp ginger garlic paste
  • 1 tsp Master Cook cumin seeds
  • 1/2 tsp turmeric powder
  • 1 green chilli, finely chopped
  • 1 tbsp chilli powder
  • 1 boneless chicken breast, julienned
  • 1 tomato, sliced
  • 1 capsicum, sliced
  • 1/2 tsp coriander powder
  • 2 tbsp coriander leaves
  • 1 tsp lemon juice
  • 3 eggs
  • Salt to taste

  • Heat oil and roast cumin seeds. Add ginger garlic paste and cook till fragrant.
  • Add onions, capsicum and green chilliies to this.
  • Add tomatoes and the powdered spices. Let the spices cook and then adjust salt.
  • Add the chicken and cook completely. Stir in lemon juice and coriander leaves.
  • Whisk together eggs, salt and chilli powder.
  • Heat oil in a pan and add the egg mixture to this.
  • Let cook on a low flame and add the chicken mixture to one half of the omelette.
  • Fold the other half over this and let the bottom brown a little. Flip and repeat on the other side and serve.
