Procedure

  • Mix potatoes, rice flour, urad dal, salt, whole spices and baking powder together.
  • To this, add a little oil and rub it in until the mixture becomes crumbly. This is to ensure that it crisps up while cooking.
  • If the dough does not form an even mass, add a spoonful of water to it. Add as little water as possible because water will make the product soggy.
  • Let this dough rest for 5 minutes and then divide into small roundels.
  • Heat oil in a kadai or a wok.
  • Grease your hands and flatten each roundel until it is about 2 mm thick.
  • Fry these crackers in hot oil until golden and crisp.
  • Your perfect tea time snack can be served with a cup of cutting chai or tea.
